Fall Harvest Vegetable Soup

A great way to warm up on a cool Autumn day!

This is a delicious healthy soup and easy to make as well. I visited my local farmer's market and picked up a variety of the fresh produce they were selling. The fall vegetables looked so delicious and great for soups.  The vegetables I chose were: purple potatoes, red onion, green onions, carrots, purple sweet potatoes. Then I chose red, yellow, and green peppers, sugar snap peas, and green beans from the grocery store to add to it. You can choose whatever vegetables you would like but the ones above were delicious together.


Ingredients:

Vegetables (clean, peal, and chop up the vegetables you have chosen in the amounts you prefer)

1 large 48 oz box of chicken broth ( I chose the 100% fat free, no msg. added)

Any type of meat you would like (1 lb. ground turkey or ground beef but I used 2 chicken spinach with sun-dried tomato bratwursts cut up into small pieces)


Directions:

1. Cook your meat on stove top and set aside.

2. Combine all the ingredients above on a medium sized pan and simmer adding the meat and simmer until all vegetables have softened. My soup simmered for about an hour.

3. You can add salt and pepper to taste but I didn't add any to mine because with all the ingredients it was seasoned enough most likely due to the spices that were in the bratwurst I used.
